茶与咖啡在近代英国的竞争

①茶与咖啡,分别被视为中西文化的象征,但在西方国家中,英国也以爱好饮茶而著称。英国人的饮茶习惯是逐渐形成的,而咖啡在英国一度也颇为流行。

②咖啡最初是在埃塞俄比亚被一牧童发现,后来经阿拉伯地区、土耳其传到欧洲。1652年,伦敦第一家咖啡馆开张。咖啡作为新兴饮料受到欢迎,伦敦咖啡馆的数量也迅速增长。由于咖啡馆收费低廉,各界人士都乐于前往,在那里休闲解乏、阅读报刊、交流信息乃至针砭时弊,咖啡馆成为颇具影响的公共场所。

③17世纪上半叶,茶得以进入西方并进入英国,但其社会影响较为有限。到了17世纪末,饮茶主要局限于社会上层。1657年,英国商人托马斯·加威首次将茶引入咖啡馆,并张贴海报宣传茶的养生功能。

④咖啡在英国社会的流行,有两个有利因素:首先,运输条件的优势。当时咖啡的主要产地在也门,与英国距离较近,这与从中国运输茶叶相比更为便捷;其次,由于运输距离近,咖啡的价格较茶而言更为低廉。

⑤但是,咖啡在英国很快便遭遇传播阻碍。随着咖啡馆数量的增长,竞争不断加剧,经营者开始增添新的饮料,茶正是在这一背景下跻身咖啡馆之中,咖啡馆实际变为提供咖啡、酒类、茶水等饮料的交流场所,咖啡的生存空间受到挤压。更为不利的是,社会人士开始抨击咖啡馆与咖啡。在英国,咖啡馆是一个男性化的场所,常常兼营陪宿等生意,女性群体被排斥在外。有社会人士假借妇女的口气对咖啡予以批判。他们痛陈咖啡在英国所导致的不良变化,认为咖啡颜色像磨碎的煤炭,咖啡馆破坏了英国人善结人缘的美德,以前英国男士充满男子气魄,如今却失去了昔日的威仪,罪魁祸首即饮用咖啡。英国社会出现的针对咖啡的抵制风潮,其出发点主要基于社会道德乃至经济利益。

⑥由于咖啡馆并非仅为饮用咖啡的场所,一边饮用咖啡一边阅读报刊成为普遍现象。于是咖啡馆就理所当然地成为人们关心社会问题、公开针砭时弊的场所。出于维护统治的需要,复辟的斯图亚特王朝借助社会中对咖啡的抵制,先后两次下令关闭咖啡馆。

⑦进入18世纪后,茶在英国中产阶级家庭逐渐普及。凯瑟琳王后、玛丽二世与安妮女王均喜好饮茶,她们持续的示范效应促进了饮茶在女性中的传播,女士们在家中品茗强化了饮茶的家庭化趋向。咖啡加工工序繁复,非个人所能及,饮茶则极为方便,所以在公共领域与私人空间均可以传播开来,尤其在私人空间占据优势。随着饮茶在英国的普及,下午茶孕育而生,它既是温馨家庭氛围的体现,亦可以成为社会交往的场域,极大地丰富了饮茶的社会功能,对咖啡构成挑战。

⑧更具决定意义的是,世界贸易格局促进了茶在英国的传播。最初,中西茶贸易为荷兰所掌控,英国人购茶不仅价格昂贵,而且供应量极小。后来,英国在东亚积极开拓,英国东印度公司的贸易条件有所改善,英国茶叶输入量逐年递增,茶叶逐渐取代丝绸成为英国东印度公司的业务重心,也是英国财政的重要来源,英国社会鼓励消费茶叶。

⑨英国人由饮用咖啡转为饮茶,这一变化看似平淡无奇,实则折射了复杂的历史进程。这既与两种饮品的特性、传播领域的差异、咖啡馆的变迁有关,更是两种饮品贸易格局发生变化的结果。
